<p style="text-align: justify;"><span style="color: #000000;">Sunday afternoon I was at the </span><a href="http://www.nyfoodmuseum.org/_phome.htm" target="_blank"><em>The Tenth Annual NYC International Pickle Day</em></a> where <span style="color: #000000;"> pickles from around the world were featured, celebrated and sampled—list of participants <a href="http://www.lowereastsideny.com/pickleday2010/index.html" target="_blank">here</a>. The event is organized by the<em> <a href="http://www.nyfoodmuseum.org/_phome.htm" target="_blank">New York Food Museum</a></em> &amp; The <em><a href="http://www.lowereastsideny.com/" target="_blank">Lower East Side Business Improvement District</a></em>. This year the <a href="http://www.umamifestival2010.com/artists/" target="_blank">Umami Food &amp; Art Festival</a> curated the first performance and art event at the festival where I was invited to offer some pickle poetry. My origins demanded that I focus on the <em>cornichons</em></span> a.k.a gherkins<span style="color: #000000;"><em>.<br />
</em></span></p>
<p style="text-align: justify;"><span style="color: #000000;">The video above features my <em>cornichon</em> poem written for the occasion and set to the music of the well know composer and  famous <em>gastronome </em></span>Gioachino Rossini (1792-1868). The title of the composition is:<span style="color: #000000;"><em> Hors d&#8217;Oeuvres III : Les Cornichons —</em> and this is not a joke.  <em><a style="border: none;" href="&lt;a href=&quot;http://www.amazon.com/gp/product/B001CF4SB4?ie=UTF8&amp;tag=wwwnicolepeyr-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B001CF4SB4&quot;&gt;Rossini: Quatre Hors d'Oeuvres, Quatre Mendiants, etc.&lt;/a&gt;&lt;img src=" target=" mce_src=">Quatre Hors d&#8217;Oeuvres et Quatre Mendiants</a></em> are part of Rossini&#8217;s last sets of compositions called &#8220;Dernier Pêché Mortel, de Vieillesse&#8221; or in English:  &#8220;Sins of Old Age&#8221;. These unpublished late compositions (1857-1868), now compiled in 14 volumes, were meant to be performed at private occasions in the composer&#8217;s drawing room.  Below are the details of Volume/ Book 4:</span></p>

<p style="text-align: justify;"><span style="color: #000000;">The <em>Quatre (4) Mendiants</em>:<br />
<em>[Mendiants </em>refer to dried fruits and one of the Thirteen desserts of the Noel Provençal. Each fruit is supposed to represent the robe color of four monk orders]<br />
<em>Les Figues sèches &#8211; dry figs  — Carmel order<br />
Les Amandes &#8211; almonds —Dominican order<br />
Les Raisins- raisins —Franciscan order<br />
Les Noisettes &#8211; hazelnuts</em> — <em>Capuchins order</em></span></p>
<p style="text-align: justify;"><span style="color: #000000;"><span style="border: medium none;">This occasion lead me to reconnect with the marvelous Franco-Italian  singer-song writer Nino Ferrer (1934-1998). I learned his &#8220;Les</span><span style="border: medium none;"> Cornichons&#8221; and even if you don&#8217;t know French, do listen to it. Nino Ferrer was a very interesting artist who had quite a successful carrier</span><span style="border: medium none;">. His background included studying anthropology with André Leroy Gourhan and accompanying jazz musicians like Richard Bennett &amp; Bill Coleman. Voilà — and </span>merci beaucoup to  Françoise Bevy for the photos. Enjoy!</span></p>

<p style="text-align: justify;">Those who have been following both my blog &amp; facebook postings, might remember  the various references I make on <a href="http://www.metmuseum.org/toah/hd/astg/hd_astg.htm" target="_blank">Augustus Saint Gaudens</a>.</p>
<p style="text-align: justify;">Augustus Saint Gaudens was born in 1848 in Dublin, Ireland and died in 1907 in Cornish, New-Hampshire. The reason I got involved in this project is because Augustus&#8217; father, Bernard, was born in <a href="http://goo.gl/maps/G6Do" target="_blank">Aspet</a> in 1816. Aspet is a village 28 miles away from my home town. In 2005 I was approached by Françoise Sarradet, a Saint Gaudens&#8217; aficionados from Aspet who was then president of the French Association <em>&#8220;Les Amis d&#8217;Augustus Saint-Gaudens&#8221;</em>, to create a performance to celebrated the 100th anniversary of  the sculptor&#8217;s death in 2007. The goal was to generate more awareness about the sculptor local origins and to preserve that memory. It is important to note here that Augustus Saint Gaudens was never well known in France. So, showing how famous he was in the United States and bridging the local connection was the goal of this first performance.</p>

<p style="text-align: justify;">Over the years several projects have developed, but I feel that the real meaning of  this quest revealed itself while I was working on developing a script for a documentary about his life. I realized that I was not only interested in showing the artist&#8217;s oeuvre and his incredibly successful interaction with the art world of the time, but more by &#8220;walking in their shoes&#8221;. I found out that Augustus&#8217; father, was a serious radical hanging out at <a href="http://digital.lib.lehigh.edu/pfaffs/people/individuals/" target="_blank">Pfaff&#8217;s Tavern</a> with Whitman, Clemenceau, Mark Twain to name a few. I was also made aware that there was not one piece of public art in New York when the Saint Gaudens&#8217; family arrived in the city in 1848! So by shadowing their life I re/discovered the country where I live today (NYC/USA) and the place where I come from (the Pyrenees). I found their past in my present , and my present in their past.  I am also an immigrant and generating a &#8220;dynamic&#8221; memory that can be inscribed in our becoming became essential and exciting.</p>

<p style="text-align: justify;"><strong>2006</strong>— Itinerant <strong>residency </strong>visiting all the major sites hosting Saint Gaudens&#8217; work in order to develop a performance to celebrate the 100th anniversary of the famous sculptor&#8217;s death in Aspet. Project commissioned by the <em>Association les Amis d&#8217;Augustus Saint Gaudens &amp;</em> funded by the <a href="http://www.midipyrenees.fr/" target="_blank">Conseil Regional de Midi Pyrenées</a>. <p style="text-align: justify;">-The <strong>show</strong> <em>&#8220;Augustus Saint Gaudens returns to His Fatherland&#8221;</em> was performed in Aspet in <strong>2007</strong> &amp; in Luchon in <strong>2008</strong>. Both shows featured the incredible French baritone Jean Ribet &amp; my son <a href="http://www.milesjorispeyrafitte.com/" target="_blank">Miles Joris-Peyrafitte</a> as the best stage manager. The <a href="http://www.haute-garonne.fr/" target="_blank">Conseil Général de la Haute-Garonne</a> funded partially this project along with several local sponsors. The two short videos below are live excerpts from the 2007 show. We had a lot of fun and I cooked a pretty unusual <em>&#8220;saupiquet&#8221;</em> that was fed to the audience at the end of the show. I will talk more about this recipe in the future.</p>

<p style="text-align: justify;">-In 2009 Yoan Rumeau asked me to write an extensive <strong>article</strong> in the scholarly history bi-annual <a href="http://www.comminges.org/spip.php?article27" target="_blank">La Revue de Comminges</a>. I did and for this project I am in debt to my husband Pierre Joris for his editing.</p>
<p style="text-align: justify;">-In April 2010 I presented an <strong>illustrated conference </strong>for the ACF (U.N French Cultural Association). Thank you to Françoise Bevy &amp; Mme Françoise Cestac. Madame Cestac has a big fan of Augustus Saint Gaudens work for years.</p>
<p style="text-align: justify;">-Then, last May, I completed the <strong>script for a documentary</strong> for now called: <em>&#8220;Une En/quête- Collectages sur la Vie et l&#8217;Oeuvre Augustus Saint Gaudens&#8221;</em>.  This was certainly the most painful piece of work I have done so far on this project or at the matter fact on any other.  I never gotten so close to being fried &amp; eaten live! As my therapist said in the thick of it: &#8220;Nicole, this is the graduate program!&#8221; I learned a lot about the movie business, script writing,  how to deal with undermining colleagues, and got the best  workout on self confidence. So with the support of my husband, my family &amp; great friends I pulled through!  Needless to say that at this point I will pursue this project until it makes it on the screen weather I&#8217;ll get it done this life or next!</p>
<p style="text-align: justify;">-The  latest component I am working on is a <strong><a href="http://www.augustussaintgaudens.com" target="_blank">website</a></strong> gathering all the info regarding my projects on Augustus. For now it is in French,  an English version will be added sooner or later. So for now go brush up on your French @ :</p>

<p style="text-align: justify;"><span style="color: #000000;">Saturday July 3rd 2010 was the 11th  annual Tsatsawassa Poetry BBQ. Once again Bernadette Mayer &amp; Phil Good opened their house to soulful poetry &amp; food. Master of ceremony Dave Brinks flew from Nola with coolers filled with what might be the last delicacies from Louisiana for a while. This year&#8217;s festival mood was  blackened by the Deep Water Horizon oil gushing.</span></p>

Pierre Joris and I collaborated in making sangria and lamb burgers. A proud moment for us: our son Miles Joris-Peyrafitte gave his first public poetry reading, and so did his good friend Tommy Panitz. Miles also accompanied my reading. </span></p>

<p style="text-align: justify; padding-left: 0px;">With Alyssa and Katie we had great fun later in the night  making  an improvised dessert in the <a href="http://www.firepies.com/irons.html">Round Pudgy Pie Iron</a> —a.k.a as a Hobo Pie Iron—Alyssa had brought.  We made two batters. Katie&#8217;s batter was a mix of left over corn meal cake mix, flour &amp; oil. Mine was 2 biscuits crumbled, milk, egg &amp; banana. We poured melted butter in the iron, warmed it up and then  poured the batter. We propped the iron on a rock to make sure it would stay flat. The cakes need to be flipped after a few minutes depending where the pie irons are in the fire. We flambeed the banana ones with brandy, and served the corn cakes with honey and goat yogurt on top. Yummy!</p>

<p style="text-align: justify;">Wow! Since I returned from Chicago I have not had a chance to post to the blog. It has been insanely busy:</p>
<p style="text-align: justify;">There is the ongoing work on <a href="http://www.augustussaintgaudens.com/Augustus_Saint_Gaudens/Welcome.html" target="_blank">Augustus Saint Gaudens</a> with the documentary script writing advancing slowly but steadily.  I am trying  to clarify some aspects of his father&#8217;s life —Bernard Saint-Gaudens— in their early years in NYC. It is quite fascinating to dig into the history of this period and  discover that there was a lot of French political immigrants in NYC. They all mingled at a German tavern called Pfaff&#8217;s. I found some evidence that Bernard was among the patrons. A famous client of Pfaff&#8217;s was Walt Whitman! Chances are the two men crossed paths. Now that is exciting to me! But this week I had to put Augustus and Bernard on the back burner as I prepared to hang a painting show for the <a href="http://www.nicolepeyrafitte.com/dartagnanartshow/DArtagnan_Art_Show.html" target="_blank">D&#8217;Artagnan 25th Anniversary Art Show</a>.</p>
<p style="text-align: justify;">Ariane Daguin, president of D&#8217;Artagan, is celebrating the 25th Anniversary of her company and it is quite a grand affair. 200 native Gascons have flown over the Atlantic to assist in the celebration.  It all started by a beret toss contest on 14th street an 9th Ave on Thursday at noon. The passersby had never seen such an event. Two festive bands —we call them <em>bandas</em> in the south of France— animated the competition. I was proud to participate and tossed my beret really far &#8230;we all took gold, silver and bronze and that was a glass of delicious and crisp Colombelle white wine, tasty Saucisson &amp; hearty paté — provided by d&#8217;Artagnan, of course! Ariane and her company have brought a whole new line of food products to the American table. In many ways she is a role model both as a friend and as an entrepreneur.</p>

I am honored to be one of the <em>Three Gascon Musketeers of Art</em> picked by Ariane. I am also honored to show in the company of celebrated sculptor and rugby player Jean-Pierre Rives and famous Toulousain painter Michel Calvet.  I will show large canvases that have never been exhibited in the US before. <p style="text-align: justify;"><span style="color: #000000;">In Occitan-Gascon the word <em>magret</em> —from the latin <em>magre,</em> literally means “lean”<em>.</em> It is definitely the leanest piece of the <em>canard gras</em> — that is the fattened <em>moulard</em> duck raised for <em>foie gras. </em>To make <em>moulard</em> ducks fat, force-feeding is required for a few weeks. </span></p>

<p style="text-align: justify;"><span style="color: #000000;">This ancient technique seems to be referenced as far back as the 5<sup>th</sup> century BC. The <em>Moulard</em> duck is a hybrid cross of Pekin and Muscovy duck. Do not confuse <em>Moulard</em> with the very lean wild Mallard duck.</span></p>

<p style="text-align: justify;"><span style="color: #000000;">The <em>magret</em> is the breast that is detached from the carcass once the liver had carefully being extracted. In the <em>canard gras</em> nothing goes to waste. The skin is rendered for fat; the fat is then used to simmer the legs and <em>manchons</em> (wings). Once cooked this meat is known as <em>le confit</em>. <em>Le confit</em> is then stored in earthenware pots, covered with fat to seal it, and used throughout the winter in various preparations. The hearts (look <a title="duck hearts" href="http://nicolepeyrafitte.com/blog/2009/08/02/duck-hearts-trouts-kanoon-more/" target="_blank">here)</a>, livers, gizzards are pan fried with garlic and parsley, the carcasses (called “demoiselles” —or the misses) &amp; tongues are grilled in the fireplace for snacks.</span></p>
<p style="text-align: justify;"><span style="color: #000000;">Speaking of carcasses: in 1990, while  doing an internship at the Daguin’s restaurant I witnessed a “<em>concours de demoiselles</em>” organized by the Château St. Mont in Plaimont (Gers). The goal of the “carcass eating/cleaning contest” is to eat as many <em>demoiselles</em> as possible in the least amount of time while leaving the bones clean as a whistle. <p style="text-align: justify;"><span style="color: #000000;">Another anecdote related to <em>magret</em> took place at the top floor restaurant of the Eiffel Tower in December of 1967. Jean &amp; Renée Peyrafitte, my parents, &amp; André &amp; Jo Daguin, Ariane’s parents, were handed over the restaurant for <em>La Quinzaine Midi-Pyrénées à la Tour Eiffel</em> —two weeks of French Southwest fare in the skies of Paris — kind of the birth/ recognition of Cuisine du <em>Terroir</em>. I didn’t get to go, but I was 8 years old and I still remember all the excitement. The opening event was a banquet for the food writers and VIP’s. One of the most exciting items on the menu was the newly ‘dressed’ <em>magret</em> de canard. The <em>magrets</em> had been shipped from the Gers to arrive just on time, but on the morning of the event they had not yet arrived. The <em>magrets</em> were replaced with lamb and as in the Vatel story —though unlike Vatel my dad &amp; André Daguin kept their calm and didn’t need to end their lifes over the problem— the <em>magrets</em> arrived during the luncheon. André Daguin, who like his daughter is never short of a creative idea when it comes to p.r., announced to the press that the <em>magrets</em> had just arrived; he showed them what they looked like, explained how to prepare them and one their way out all the diners were handed a <em>magret</em> wrapped in foil.  They got many write-ups, lot of word of mouth publicity and the restaurant was packed for the two full weeks!</span></p>
<p style="text-align: justify;"><span style="color: #000000;">Today you can purchase <em>magret</em> through the d’Artagnan <a href="http://www.dartagnan.com/51335/565628/Duck/Moulard-Duck-Magret-Half-Breast.html." target="_self">website</a>. Some specialty store have duck breast but most of the time there are Muscovy Duck breast, which are good but smaller.  One of my favorite recipe that I used to make often at the family restaurant is Magret with walnut and honey glaze. I made it the other night and yum! it is tasty.<br />

<p style="text-align: justify;"><span style="color: #000000;"><span style="color: #993300;"><strong>Recipe for Magret aux Noix et au Miel:</strong></span></span></p>

<p>2 <span style="text-decoration: underline;">Moulard</span> magrets can serve 4<br />
1 Shallot finely chopped<br />
½ cup of Armagnac or Brandy<br />
1 cup of stock or 2 tablespoon of demi-glace<br />
2 teaspoons of honey<br />
2 Tbsp shelled walnuts<br />
1 tbsp of unsalted butter</p>
<p><span style="color: #000000;">Score the skin of the duck magret. <em>Do not cut into the meat, only the skin.</em><br />
Salt and pepper both side.<br />
Place in a warm skillet on the skin side — <em>no need to add  fat, the skin will render plenty.<br />
</em>Cook for about 8 minutes or so on the skin side —<em>if you like it pink. More for well done.<br />
</em>Flip it over on the meat side for about 4 minutes.<br />
Remove from the pan keep the magret between two plates to avoid loss of heat.<br />
Drain the fat from the pan except for about 1 tablespoon—<em>keep fat to sauté potatoes.</em><br />
Sauté ½ cup of shallots until translucent.<br />
Deglaze pan with 1/2 cup of Armagnac and flambé —<em>I alway turn off the fan when I do it.</em><br />
Add 1 tablespoon of honey and 1 cup of broth or better, some <a href="http://www.dartagnan.com/51181/565606/Pantry-Goods/Duck-and-Veal-Demi--Glace.html" target="_blank">demi-glace. </a></span><span style="color: #000000;"> Let reduce, then add 2 Tbsp shelled walnuts —<em>do not let the walnuts sit too long in the pan as they will give a bitter taste to your sauce</em>.<br />
Cut you magret in slices horizontally, pour all the juice in the sauce pan.</span><span style="color: #000000;"> At the last minute finish your sauce with a dollop of soft butter, salt &amp; pepper to taste.<br />
Serve with your favorite starch.<br />

One of them is the preparation of the performance with Pierre Joris &amp; Miles Joris-Peyrafitte that will happen this coming Thursday in Angoulême (France). No Thanksgiving for us! We are off tomorrow and below is the info about the show in case you are around this area. This is my first trip to the <a href="http://en.wikipedia.org/wiki/Poitou-Charentes" target="_blank">Poitou-Charente</a> region and I am looking forward to discover their food specialties and have some of the delicious Pineau des Charentes — a mix of wine and cognac. During my trip to Boston, Springfield (MA) &amp; Cornish (NH) nothing I hate was memorable, though all very decent. The highlight was definitely a vegetable chowder and a lobster roll at the Windsor (VT) train station.  The focus on my trip was not food at all, but more research on Augustus Saint Gaudens (1848-1907). My first involvement with the American sculptor began in 2005 when I was commissioned to create a multimedia performance for the 2007 hundredth anniversary of his death. Augustus Saint Gaudens and I share common Gascon origins. Augustus&#8217; father, Bernard St-Gaudens, was born in Aspet (French Pyrenees) in 1816 —the  village of Aspet is next to my hometown. Bernard St-Gaudens (they spelled their names differently) was a shoemaker, he left Aspet very young, moved to Salies du Salat, Carcassonne, Paris, London and settled in Ireland where he married Mary McGuiness in 1841. Together and with their 6 month old  son Augustus, they emigrated to the USA in 1848. There is currently a show at the <a href="Augustus Saint-Gaudens in The Metropolitan Museum of Art ">Metropolitan Museum</a> on the museum collection of the artist. Anyhow I will not get into details now, but I will leave you with the photograph of a funny article that I found in the archives at the Rauner Special Collections at Dartmouth. More soon!</span></p>

After a long trip we arrived in my hometown, <a href="http://www.luchon.com" target="_blank">Luchon</a>, in the Central Pyrenées.  There is very little time to process pictures and notes gathered daily. Since we got here, it has been an uninterrupted stream of aperitifs, meals, digestifs with family and friends.<br />
For now I will report on our transit day in Paris on 14 July, Bastille Day. We landed from our transcontinental flight midday and directly headed to Gare d’Austerlitz to drop off our luggage until our night train to Luchon. It sounded convenient and pleasant to have lunch at the nearby Jardin des Plantes and then spend time in the gardens and menageries. As Bastille Day is also <a href="http://pierrejoris.com/blog/" target="_blank">Pierre’s</a> birthday, we were really looking forward to a nice meal on the outside terrace of the newly renovated restaurant “ La Baleine.” The sun, the bread &amp; very decent house wine kept us content, though the meal was mediocre, overpriced and the service lousy.<br />
The garden was originally planted in 1626 as a medicinal herb garden. Back then it was known as the Jardin du Roi </span><span style="color: #000000;">(Louis XIII).</span><span style="color: #000000;"> In 1640 it opened to the public. In 1792 the Royal Menagerie was moved to the gardens from Versailles. Among a wide variety of animals we had a great time watching the super entertaining orangutans, the 250 lb 120 years old Aldabra Giant tortoise (Geochelone gigantea) and I was particularly delighted spending time with the White Nape Cranes. Last fall I wrote a piece called crane/grue that is on my cd <a href="http://www.tawilproductions.com/storecds.html" target="_blank"><em>Whisk! Don’t Churn!</em></a> Below you will find the recording as the sound track of the video I shot Monday.</span></p>
<p><span style="color: #000000;">So voilà for now! My son Miles and I are off tomorrow for a short trip to Aix-en-Provence for a mother and son adventure, while Pierre Joris will be in Lodève at the Poetry Festival “Les Voix de la Mediterranée.” We will join him towards the end of the week for a shared performance, and then back to the Pyrenées — and for now, as we say here, Adishatz! </span>

Pierre will be at the fabulous Lodève poetry festival : <a href="http://www.voixdelamediterranee.com/2009/index_poetes.html" target="_blank">Les Voix de la Mediterranée</a> (July 18-27). He will perform almost every day and we will meet up with him around July 24th. Miles Joris-Peyrafitte and I will debut our duo tour in the streets of Aix, Montpellier, Lodève and we will have 2 concerts in <a href="http://www.peyragudes.com/site/ete/" target="_blank">Peyragudes</a> (Thursdays 6 &amp; 13 of August). Peyragudes is a resort next to Luchon.</span><span style="color: #000000;"> I do hope to be able to post photos and recipes as often as possible. Meanwhile I have to run to open more boxes in order to repack! I want to leave you on a less frantic note. Below, a beautiful recipe  from Ken Albala. Ken is a food historian, a great investigative cook, and an excellent  writer.  Ken&#8217;s books should be on your summer reading list. I am savoring his book on  beans myself and always read his blog, <a href="http://kenalbala.blogspot.com/2009/07/pate-de-campagne.html" target="_blank">Ken Albala&#8217;s.</a> Today I am cross posting my favorite kind of paté. Like Ken, I like chunky patés, and am not a fan of the smoothie spreading kind. <div><span style="color: #000000;">I have to admit, I was not sure what this would be when I started. And I&#8217;m still not sure. A souse, coppa di testa, sulze. Not really, those are all set in gelatin. Nor really a pate, because it isn&#8217;t smooth and spreadable. Not that a pate de campagne should be. So there it is. And have to admit, this solid toothsome version is much more interesting than the cream-laden versions one normally sees, covered in bacon. If you want bacon, eat bacon. This one is actually cured pork. Very simply seasoned.</span></div>
<div><span style="color: #000000;">SO, I offer you a recipe! In standard format. Ah me. But technique IS antiquated.</span></div>
<div><span style="color: #000000;">2.5 lbs of boneless pork shoulder, or 4 fatty country ribs.</span></div>
<div><span style="color: #000000;">2 tbs salt</span></div>
<div><span style="color: #000000;">1 tsp coarsely ground pepper</span></div>
<div><span style="color: #000000;">1 tsp thyme or other herb you like, esp. juniper</span></div>
<div><span style="color: #000000;">1 good pinch instacure #1 (pink curing salt)</span></div>
<div><span style="color: #000000;">3 ice cubes</span></div>
<div style="text-align: justify;"><span style="color: #000000;">Coarsely chop the pork and pork fat into small nubbins. Add the seasonings. Mix and put in the fridge for 5 days to cure. Then put the mixture into a large mortar and pound the hell out if it for about 15 minutes. Throw in the ice cubes as you go. This is a GREAT upper body workout. I suspect if you kept going with this you would have a smooth bologna. The mixture is very much a sausage mix, with darker, lighter and white fat in a suspension but still separate, which would not work in a grinder or processor. If you have a large beef bung I would stuff it in there. I used a large round porcelain ramekin. Cover it with plastic wrap, and place in a steamer. Steam gently for 40 minutes. Cool and refrigerate at least 24 hours. Slice and serve with mustard, good rye (which I baked yesterday) and cornichons &#8211; which alas I had not. You can also slice this very thinly and make sandwiches. The next time I do this I am going to pour in a glug of cognac, or maybe vinegar. Gin would be lovely too.</span></div>
